Step 1: Weigh the cooked chicken

For example: 180 g cooked chicken on your digital scale.

Step 2: Identify the preparation

Was it grilled, roasted, boiled, poached, or air-fried? Choose the closest cooked reference available.

Step 3: Use cooked nutrition data

Do not select a raw chicken entry just because the chicken started raw. Your measurement was taken after cooking, so your food record should represent cooked food.

Step 4: Account for added ingredients

If you used oil, butter, sauce, glaze, breading, sugar, or cheese, account for those ingredients separately unless your chosen nutrition entry already includes them.

The simple rule

Weighed raw? Log raw. Weighed cooked? Log cooked. The more closely the food entry matches what was actually on your scale, the less confusing your tracking becomes.

Why Does Cooked Chicken Have More Protein per 100g?

This can look strange at first. You may see approximately 22 to 23 g protein per 100 g raw, but 30 to 32 g protein per 100 g cooked. It may look like cooking created protein. It didn't.

The main explanation is water loss. A raw chicken breast contains a substantial amount of water. During cooking, some of that water evaporates or leaves the meat. The finished chicken becomes lighter. So 100 g cooked chicken usually represents more original raw chicken than 100 g raw chicken. That makes protein and calories more concentrated when both foods are compared by equal weight.

How Much Weight Does Chicken Lose When Cooked?

There is no single conversion that works perfectly for every chicken breast. Cooking loss depends on:

  • preparation method
  • thickness
  • cooking temperature
  • time
  • final internal temperature
  • starting moisture
  • brining
  • injected solution
  • resting

A chicken breast that is cooked gently may retain more moisture than one cooked longer or at a higher temperature. This is why we should not state that chicken always loses exactly 25% of its weight. Any conversion tool should be labeled estimated raw-to-cooked weight unless the visitor measured their own batch.

Does Cooking Chicken Increase Its Calories?

Cooking plain chicken does not magically add energy. If you begin with chicken and use no calorie-containing ingredients, the biggest reason calories appear higher per 100 g after cooking is water loss.

But cooking can increase the calories of the finished dish when you add ingredients such as:

What If You Batch Cook Chicken?

Batch cooking gives you another accurate option, particularly useful if you meal prep:

  1. Imagine you start with: 1,000 grams of raw chicken. You know the nutrition of the entire original batch.
  2. After cooking, the full batch weighs: 750 grams.
  3. If you serve: 150 grams cooked, your portion represents: 150 ÷ 750 = 20% of the cooked batch.
  4. You can therefore assign approximately 20% of the nutrition of the entire original batch to that serving.

I like this method because it uses your actual cooking loss instead of assuming that every chicken breast loses a fixed percentage. It is very useful when several chicken breasts were cooked together, pieces have different sizes, or cooking loss is uneven.

Important batch tip: If several ingredients were cooked together (for example: chicken + olive oil + honey + soy sauce), calculate the recipe rather than treating the final food as plain chicken.

Does the Cooking Method Change the Nutrition?

Yes, especially when you're comparing values per 100 grams. There are two different effects: water loss (which changes nutrient concentration) and added ingredients (oil, butter, broth, marinades, breading, sauces).

Does Cooking Oil Count?

Yes. Plain cooked chicken references generally describe the chicken itself unless the food record specifically says otherwise. If you add oil during cooking and some remains on or in the finished food, it contributes calories and fat.

One mistake I would avoid is telling readers that all the oil you put in the pan was absorbed. That isn't necessarily true. Some oil may remain in the pan, drip away, stay on equipment, or remain on the food. For accurate recipe tracking, measure ingredients and calculate the whole finished recipe whenever possible.

What About Marinades and Sauces?

It depends on what is in them. A simple lemon-and-herb marinade may contribute very little energy. A marinade containing olive oil, honey, sugar, syrup, or mayonnaise can make a meaningful difference.
